Something Yummy for Saturday


Size of pan not submitted.
2        Cups  Sugar
2        Cups  Cream
1 1/3  Cups  white Corn syrup
1  Cup  Butter
1  Cup  Chopped Nuts
Procedure
1   Put sugar, 1 cup of cream, syrup and butter into large heavy saucepan.
2   Blend.
3   Bring to boil over medium-high heat.
4   Boil 30 minutes.
5   Add remaining cup of cream.
6   Bring to boil again.
7   Boil until mixture reaches "firm ball" stage.
8   Stir in nuts.
9   Pour into greased pan.

1     6 oz. pkg.  Butterscotch chips, melted
1/3  Cup          Eagle Brand Condensed milk
1/3  Cup  chopped pecans
1/2  tsp.   Vanilla
Procedure
1   In large bowl, combine all the ingredients.
2   Form into a roll.
3   Slice.

Bourbon Balls


3 cups ground vanilla wafers (12 oz box)
1 cup ground walnuts
1 cup powdered sugar
2 tablespoons cocoa powder
3 tablespoons light corn syrup
1/4 - 1/3 cup bourbon (can use rum)
1/4 cup water

Mix well, roll into small balls (about an inch diameter), then roll in more powdered sugar. Chill at least 3 hours, store in an air-tight container. Let set overnight before serving.

These are NO-COOK, so the alcohol does not cook out! I ate them when I was a kid, my kids eat them now. Use your own judgment and serve accordingly.
