Something Yummy for Saturday


So many recipes begin with browning ground beef with an onion.  Here are a couple.

"For many years Mom and Jay and I would get together with Jim and Georgia and their sons, Marvin and Ron for our own Christmas celebration. We always had these sloppy joes with potato chips and Christmas candy that mom made." Ginny
1  can   Chicken Gumbo soup
1  lb.   Ground beef
1  tsp   Prepared mustard
¼  cup  Ketchup
3   T     Onions, chopped
            Buns
Procedure
1   Brown ground beef and onions.
2   Drain.
3   Add , soup, mustard and Ketchup.
4   Simmer until thick.
Note:  I also add some Worcestershire Sauce with these.

Spaghetti Bake 
This dish was brought over after Jay was hospitalized and represents all the kind and caring things people did for Jay and I after our hospitalizations.
1     7 oz. pkg  Elbow macaroni, cooked
2     T             Butter or margarine
1/2  cup          Parmesan cheese, grated lemon peel
2                    Eggs, well beaten
1     lb            Ground beef
1  small   Onion
1  28 oz.  Spaghetti sauce
               Mozzarella
               Pepperoni slices
Procedure
1   In a large bowl, combine elbow macaroni, butter, Parmesan cheese, and eggs.
2   Place in greased 9 x 13" pan.
3   Set aside.
4   In a skillet, cook ground beef and onion together.
5   Drain.
6   Spoon on top of macaroni mixture.
7   Pour spaghetti sauce on top.
8   Sprinkle liberally with mozzarella cheese.
9   Place pepperoni on top of mozzarella cheese.
10   Cover with foil.
11   Bake for 20 minutes.
12   Remove foil.
13   Bake another 15 minutes.
14   Let stand 5 - 10 minutes before cutting..
Yield: 9 x 13
Oven Temperature: 350°F
Cooking Time: 20 minutes

Lasagna  - Ellen's
2     lbs.             Ground Beef
1     large           Onion, chopped
1     clove           Garlic (optional, but good)
1½  tsp.             Salt

1     12-oz. pkg.  Mozzarella Cheese (may also use Monterrey Jack Cheese), grated
½  tsp.           Black pepper
1   tsp.           Oregano
2   Cups         Tomato Sauce
1   small. can  Tomato Paste
1   1-lb. pkg.   Lasagna Noodles
Procedure
1   Brown meat with
2   Add tomato sauce, tomato paste, seasonings and garlic.
3   Simmer for 1/2 hour.
4   Cook lasagna noodles according to directions on package; drain and rinse with cold water.
5   Spoon a small amount of sauce over bottom of lightly greased 9 x 13" baking dish and spread with back of spoon to cover bottom of dish.
6   Place a layer of lasagna noodles on top of sauce.
7   Spoon meat sauce over noodles
8   Sprinkle with grated cheese.
9   Repeat layering until all ingredients are used.
10   Remove from oven and allow to cool for 5 minutes before cutting.
Oven Temperature: 425°F
Cooking Time: 30 minutes

Here is another lasagna recipe that I got from Dee Oates. I like it best.
Lasagna
1     pkg.     Lasagna Noodles
1½  lbs       Ground Beef
1     carton   Cottage Cheese (I use dry-curd)
1  pkg.  Mozzarella Cheese
1  jar     Spaghetti sauce
Procedure
1   Grease pan.
2   Brown ground beef.
3   Cook lasagna noodles according directions on the package.
4   Spoon a small amount of sauce on the bottom of the dish.
5   Add a layer of lasagna noodles over sauce.
6   Sprinkle ground meat over lasagna noodles
7   Add a layer of cottage cheese.
8   Add a layer of grated mozzarella cheese.
9   Add a layer of sauce.
10   Repeat the layers, ending with sauce.
11   Bake.
12   Remove from oven and let stand for 5 minutes.
13   Note:  The sauce can be any spaghetti sauce you want but I really find that if I use American Beauty brand and prepare it using three cans of Hunt's Tomato Sauce with Mushrooms it is best.
Yield: 9" x 13"
Oven Temperature: 350°F
Cooking Time: 35 minutes
