Something Yummy for Saturday

A couple of recipes from my Mother's sister Ellen Cole.  Since I put up a picture of her old home on Thursday I thought I would share a couple of her recipes.

Applesauce Peanut Bread

1            Egg, beaten
1   cup    Applesauce
2   T      Cooking oil
2   cups  Flour
¾  cup    White sugar
3   tsp   Baking powder
½  tsp   Cinnamon
¼  tsp   Allspice
½  tsp   Baking soda
1   cup  Salted peanuts, coarsely chopped
Procedure
1   Grease and flour pan.
2   In large bowl place egg.
3   Add applesauce and oil
4   Mix slightly.
5   Sift together:  flour, sugar, baking powder, cinnamon, allspice, and baking soda.
6   Add chopped peanuts (kind without red skins) and mix well.
7   Add flour-peanut mixture to egg mixture.
8   Stir until just blended.
9   Pour into loaf pan.
10 Bake.
Yield: 1 loaf
Oven Temperature: 350°F
Cooking Time: 1 hour

Gum Drop Bars

4            Eggs, beaten
2   cups  Brown sugar
1   T      Water
1   tsp    Vanilla
2   cups  Flour
¼  tsp    Salt
½  cup    Walnuts, chopped
1   cup    Gum drops, finely chopped  (black licorice ones omitted)
          TOPPING
3  T    Butter
2  T    Orange juice
1  tsp  orange rind, grated
          Confectioner's sugar, enough to make the icing the desired consistency for spreading
Procedure
1   Grease cookie sheet.
2   In a mixing bowl, place eggs, sugar, and continue mixing until smooth.
3   Add water and vanilla.
4   Mix.
5   Add flour, salt and nutmeats.
6   Mix.
7   Stir in gum drops.
8   Spread batter into large, greased cookie sheet.
9   Bake.
10 While still warm spread with the topping.
11 TOPPING
12 In mixing bowl combine: butter, orange juice, orange rind, and confectioners sugar.
13 While still warm cut into desired size for bridge or tea cakes.
Oven Temperature: 350°F
Cooking Time: 30 minutes
