Something Yummy for Saturday

Double Blueberry Muffins (Submitted by Ginny Jackson)


I found this recipe in JoAnne Fluke's mystery book "Blue Berry MuffinMurder". Mom, Fran, and Jean would have loved this mystery series. The three of them were always recommending books to read, even what Fran referred to as “rape and screw" books. This series is set in Northern Minnesota.
¾ cup    Butter, melted
1  cup    Sugar
2           Eggs, beaten
2  tsp     Baking powder
½ tsp     Salt
1  cup    Blueberries, fresh or frozen (do not thaw)
½ cup    Blueberry pie filling
2   cup   Flour
1   T      Flour
½  cup   Milk
            TOPPING
½  cup   Sugar
1/3cup   Flour
¼1       cup   Butter, melted
Procedure
1   In large bowl, combine: melted butter, sugar.
2   Add eggs, 2 cups flour, baking powder, and salt.
3   Set aside.
4   In a bag shake blueberries and 1 tablespoon flour.
5   Add milk and pie filling to bowl.
6   Stir.
7   Add blueberries.
8   Fill lined muffin tins ¾ full.
9   In a medium bowl, combine topping ingredients.
10  Sprinkle on top of muffins.
11  Bake: 375°, 25 - 30 minutes.

12  Cool.


Easy Pecan Rolls (Submitted by Ginny Jackson)
1  stick Butter
1  cup   Brown sugar
½ tsp  Cinnamon
24   Frozen dinner rolls
              Pecans, chopped
1  pkg.  Butterscotch pudding mix NOT instant
Procedure
1   Grease bottom and sides of 9 x 13" pan.
2   Place rolls in bottom of pan.
3   In a medium saucepan, combine: butter, brown sugar, and cinnamon.
4   Bring to a simmer.
5   Pour mixture over rolls.
6   Sprinkle dry packet of pudding over rolls.
7   Cover with foil that has been greased.
8   Let stand over night.
9   Bake: 375°, 20 minutes.
Yield: 9 x 13
