Somethin 'Yummy for Saturday


Oatmeal Spice Cake (Submitted by JoAnn Peterson)
Recipe may be cut in half for an 8 x 8 pan. "Fran Dawson made us this cake one summer at "the lake" and brought it up to our cabin. It's great! Heavy and moist." Jo.
2 Cups       Boiling water
1 ½ cups    Quick oatmeal
¾   cup        Butter
1    cup       Sugar
2    cups      Brown sugar
3                Eggs
1    tsp        Vanilla
2 ¼ cups    Flour
1    tsp         Soda
1    tsp        Salt
1tsp        Cinnamon
½ tsp      Nutmeg
1 cup      Nuts, chopped
              Raisins, optional
            PENUCHE FROSTING
¼ cup      Butter
1/8 cup    Milk
½   cup     Brown sugar
1 ½ cups  Confectioner's sugar
Procedure
1   In a medium bowl, combine bowling water and oatmeal.
2   Cover for 20 minutes.
3   In large mixing bowl, combine: butter, eggs, vanilla, and sugars.
4   Add oatmeal.
5   Add dry ingredients.
6   Bake: 350°, for 45 - 55 minutes.
7   Cool.
8   Frost
9   PENUCHE FROSTING, double if you like a lot of frosting
10  In medium saucepan, boil: butter, milk, and brown sugar.
11  Cool 10 minutes.
12  Add confectioner's sugar.
Yield: 9 x 13

I so miss eating 'real food' I wish I had the metabolism to do so !
