Something GOOOD for Saturday


We met "Grandma Bea" while vacationing at LakeView Resort in Walker, Minnesota. She was there with her daughter's family (Ann and Bill Cook)and we all fell in love with them and scheduled our vacations at the same time.
2 ½  cups        Cake flour
1      T            Cake flour
2      T(scant)   Baking Soda
½     tsp          Salt
1              Egg
1  lb. can  Fruit cocktail
1  pkg.     Chocolate frosting
Procedure
1   1. Mix all the ingredients in a large bowl.
2   2. Pour into greased and floured 9 x 13 inch baking pan.
3   Bake.
4   This can be made using white frosting mix or canned peaches.
Yield: 9" x 13" inch cake
Oven Temperature: 350°F
Cooking Time: 30 minutes

I have to warn you that out Family Cookbook is not for the inexperienced cook. In the recipe above it calls for Chocolate frosting. An alternative says you can use white frosting mix. It also says mix all ingredients in a large bowl. I have no idea if the frosting is mixed in with everything else or is used to frost the cake.  Here is another fruit cocktail cake recipe from the cookbook
1½  cups   Sugar
½    cup    Brown sugar
1/2  cup    Butter
2              Eggs
1     med. can   Fruit cocktail, undrained
2     cups         Flour
1½  tsp           Baking soda
½    cup          Pecans, chopped
Procedure
1   Grease and flour pan.
2   In a large bowl, beat all the ingredients.
3   Pour into pan.
4   Bake.
5   When cool, frost with the Coconut frosting in the Frosting chapter. *
Yield: 9" x 13"
Oven Temperature: 325°F

Cooking Time: 35 minutes

½  cup    Carnation milk
1   stick  Butter
¾  cup             White OR brown sugar
1   small pkg..  Coconut
Procedure
1   Put the ingredients in a medium saucepan.
2   Boil 2 minutes.
3   Spread on cake as soon as cake comes out of the oven.
