Something good for Saturday

With Thanksgiving just over I thought you might like something to do with the leftover turkey.  These say chicken but Cathy says you can make them with turkey.


1  cup     Onion, chopped
½ cup     Green pepper, chopped
2  T        Butter
2  cups   Chicken or turkey, diced
1  can     Green chilies
3T          Butter
¼ cup    Flour
1 tsp           Coriander seed
¾ tsp          Salt
2 ½ cups    Chicken Broth
1 cup          Sour cream
1 ½ cups    Monterey Jack cheese
12              Flour tortillas
Procedure
1   In a pan, cook onion in butter.
2   In a large bowl, combine: onion, green pepper, and chicken.
3   In a small bowl, combine: butter, flour, and spices.
4   Add to chicken mixture.
5   Stir in chicken broth, sour cream, and ¾ cup cheese.
6   Fill tortillas with chicken mixture.
7   Roll up tortillas.
8   Place tortillas in a pan.
9   Top with extra sauce.
10  Sprinkle with cheese.
11  Bake: 350°, 25 minutes.

Addendum from John - "make sure the seams of the enchiladas are facing down in the pan, or you'll have a mess."

That looks wonderful. Unfortunately we had no left overs this year since we did not host the meal
