We called my grandmother's sister Auntie. She was a cool lady. She lived life fully and was the family photographer. Her husband was Warren Meeker for whom Meeker school is named. He was a white haired professor who generally ignored his great nephew when I was over there. Their house always smelled wonderful. Like my grandmother Auntie was a wonderful cook. One of the things she made was a date filled oatmeal cookie. They were wonderful. Sort of like little flavor volcanoes filled with wonderful taste and sweetness.
These

1cup Sugar
1cup Shortening
1 Egg
½ cup Sour milk
2 ½ cups Flour,
sifted
1 tsp Baking powder
1tsp Soda

1 pinch
Salt
2 cups Quick cooking oatmeal
1 lb. Dates
½ cup Sugar
1 cup Water
1 pinch
Salt

Procedure

In a large bowl,
cream sugar and shortening.

Add egg and sour
milk.

In another bowl
mix: flour, soda, baking powder, salt, and oatmeal.

Add to first
mixture.

Cool dough.

Roll very thin
using as little as possible of flour on board. Use a round cookie cutter to
make cookies.

In a saucepan
cook: dates, sugar, water, and pinch of salt; until dates are soft. (May add nuts, coconut or raisins to extend date mixture)

Put date mixture
on cookie and put another cookie on top of date mixture.

Bake: 400° until cookies are brown.
